Super Bowl Sunday

The final countdown has begun, Super Bowl 47 is a week away and whether you are watching it for the halftime show, commercials, or the actual game here are some more easy slow cooker recipes for you. 

Taco Dip (makes about 3 cups) 

1/2 lb 95% lean ground beef

1 cup frozen corn

1/2 cup chopped onion

1/2 cup salsa

1/2 cup mild taco sauce 

1 can (4 oz) diced mild green chilies

1 can (4oz) sliced ripe olives, drained

1 cup (4oz) shredded Mexican cheese blend 

Tortilla chips

Sour cream

Directions:

Brown ground beef in large skillet over medium-high heat, stirring to break up meat. Drain and discard fat. Transfer to slow cooker

Add corn, onion, salsa, taco sauce, chilies, and olives; mix well. Cover and cook on low for 3 hours. 

Just before serving, stir in cheese. 

The great thing about this recipe is you can experiment with other ingredients you like and feel free to take out those that you don’t. 

Suzie’s Sloppy Joes (makes 8 servings) 

3 lbs 95% lean ground beef

1 cup chopped onion

3 cloves garlic, minced

1 1/4 cups ketchup

1 cup chopped red bell pepper

1/4 cup plus 1 tablespoon Worcestershire sauce

1/4 cup packed dark brown sugar 

3 tablespoons prepared mustard (fancy way of saying yellow mustard or better yet Dijon) 

3 tablespoons vinegar

2 tablespoons chili powder 

Toasted hamburger buns 

Directions:

Cook and stir ground beef, onion, and garlic in large nonstick skillet over medium-high heat until beef is browned and onion is tender. Drain and discard fat. 

Combine ketchup, bell pepper, Worcestershire sauce, sugar, mustard, vinegar, and chili powder in slow cooker. Stir in beef mixture. Cover and cook on low for 7 hours.
